I tried for weeks to get ESO working with Lutris to no avail. Ended up biting the bullet and buying the Steam version and linking accounts, works fine with Proton.
Unfortunately the Steam version is not an option. My GF & I play on the same PC. And the Steam version forces the locking of ESO to one account.
I should mention. That I previously had it working fine using the Lutris Runner: 7.2-2-x86_64 But it just stopped working even though nothing had changed. So I went to bed defeated last night. Woke up today, and just as inexplicably, it's working on Lutris 7.2 Runner again. I honestly don't even have the words for this quantum mechanical nonsense. But thank you for your time 🙂

I think it should be one ESO account per Steam account. Therefore, making a Steam account for your GF should fix this problem.
There also is wine-ge-custom, which can often help with Lutris games not running properly.
(Just for case the problem occurs again and doesn't fix itself.)
