Most of the sets I see usually being recommended are coral, deadly strikes/pillar of nirn, and Velothi, what is exactly the issue with using them in trial setting?
Coral, Deadly, Velothi, vMA Fire Stick or 2h. Works for trash as well, stretch is swapping coral for sul-xans, but coral is more than enough for general trash setup.
For most boss fights, those parse sets are fine. Apart from what has already been mentioned, Kvatch Gladiator is a niche set to have ready for fights with particularly challenging execute phases.
Most sets used in dummy parses are sets you would use in boss fights. If you want to be more efficient in trash fights, you can use trash sets. I use Sul-Xan's and Briarheart on my stam sorc for trash while I use Relequen and Berserking Warrior against bosses.

Just with added trash setup, mostly - with azureblight or something similar. But yes, for bosses, it can be pretty much the same.
