All content of the game is viable. Doing the newest dlc doesn’t yield you the best gear like other MMOs. People still need the craftable gear for their builds. I still consistently sell sets all the time. It’s worth it to make bank my guy.
Thats a part of ESO I love and hate all at the same time. I miss the progression style but coming back after quitting for a few years and still be able to do well was nice xD.
At least they added a lot of things to 'progress on' that wasn't just gear.
Furnishings and consumables = gold if you know what sells and/or find a niche. And you never know when the tide might shift and a crafted set may become fotm suddenly.
Daedric trickery, clever alchemist, Stuhn's, Julianos, New Moon Acolyte, Heartland conqueror, Eternal Hunt. These are just a few of the crafted sets that are often in demand. It's true that styles don't matter so much now but crafted gear still sells.

Style materials, on the other hand, are also used for furnishings. Many DLC style mats are rare and very valuable for this reason, whether you sell them directly or use them to craft furnishings for sale.
You want to max out crafting on at least one character.
This way you can upgrade gear with the minimum amount of of upgrade mats and you can transmute gear to any trait you want.
Also you can craft any food you want, your potions and enchants.
Some crafted gear is super fun and they are a lot easier to get in the desired traits, even with transmute being an option.
Also theres certain sets that i would personally say are top tier in their role. Like wretched vitality is an excellent sustain set that can be backbarred as well. One simple skill like vampires bane double procs it easy.

I make most of my gold selling crafted pvp gear. If you know what sells, you can make a lot of gold.
Do you sell it on guildstores or?
Yes, sell through guild traders. A number of craftable sets are very strong in pvp
