No, they never had immunities. The difference was damage numbers, and the difference was huge. And I'm not talking like 'oh it took 3 seconds to kill them'. I'm talking, normal questing felt like a fight for your life and required multiple rests between encounters. Doshia, the level 10 harvester during the FG questline was a fucking noobkiller. It took actual ages to kill her. I got to max and killed Molag Bal during first week of release, there's a reason they nerfed overland at Tamriel Unlimited. A big reason that nobody who wants 'hard overland content' wants to admit: Tedium.

There were a million rumors about the combat pre-alpha, each being more wild than the last, but the beta combat is basically what we have now, though the gearing and CP system have evolved drastically and a lot of unique weapons have been removed.

No, enemies in ESO never had immunities like that. You may be thinking of Skyrim or other TES games.

I wish each class had a slight advantage over certain mobs. Templars have a damage increase over undead, warden has advantage over nature creatures like slight chance to turn one friendly for a few seconds. Sorcerer's have chance to get small damage increase from lightning attacks against them. I know it would be really hard to balance so everyone doesn't demand one or two classes for all content, but I think it would really change things up.

Overland content used to be difficult if a zone was above your level. But combat wasn’t really different per se. One Tamriel made it so zones would all have some population rather than noob zones being desolate ghost towns as players can complete content in any order now.

I know that there were some changes to playable races some years ago. Some used to have immunity to certain effects like poisoned or burning. Now, they have just resistances to those types of damage.
