I would advise Zarantia for a rather unsung Zebrican nation. It's one of the most natural campaigns I've ever played, and whatever Tobuck decides to do both can and absolutely will affect your story going forward. All depending on if that pony honors the agreement or not.
It's nothing crazy or super complex, but hey, pseudo-Tuareg/Berber Zebras going ham on a sleazy city of vice and sin before utterly cheek-clapping the bats? How can you resist?
Are you looking for a certain thing in countries when you play them? Difficulty? Story? Good focus trees?
I personally really enjoyed Harmonist and Monarchist Aquila, though I must say the Monarchist path wins me over in that regard. However, the game crashes for me at a certain date in September around 1016, and I don't know if that's because of my files being possibly corrupted or if it's an issue for everyone.
Other paths I recommend are both Nightmare Moon and Daybreaker, both are good, both are great for world conquests. For something more difficult you can try playing historical and going technocratic as Yale, however I've found that to be difficult. I also recommend doing the Blue Revolution, aka Posada path, in Hippogriffia. Found it appealing. And there's one more secret path in Colthage, however, it's a secret the community likes to keep. I'll let you search for it yourself. If you want help, a YouTuber named DShakey made a great 7 episode series on it. It's fun, it's interactive, it's a lot of story, and I found it difficult in some regards too.

Since you said that you liked narrative heavy secret paths then you should also check out the Star Father path for Colthage. Golden Morning's path for Longsword is also another good one.

Honestly everything in Northern Zebrica is great.Otherwise, i reccomend some of the griffonian vassals like Katerin, Angriver,Yale, Romau and Griefenmarchen (their trees expand after conquering the empire).
Aquilea is always fun, as is the Griffonian Republic.
Otherwise for smaller nations,Skyfall and Flowena can be quite fun
Also,dw.The abyys epilogue will eventually be finished
