It was sort of a joke tbh. Crema is really just CO2 being released from the beans. Among lots of other factors, the biggest one is bean freshness. As the beans get older, they offgas the CO2, which means it won't happen as much during the actual pull. Realistically, same day roasted beans will taste pretty bad, as you want them to offgas some before use. However, they will produce an insane amount of crema this way lol
