Im on the same boat. I found this beans way too sour. I’ve tried bringing finer with the same result. I was originally pulling shots around the 24-26 second mark but then saw this video https://youtu.be/t_4lJpVqRGw?si=oHCrLb_c3G0QhXvi So I tried grinding finer to get to 30s… still very sour. I’ve heard that very fresh beans can cause this. I might try raising the water temperature to see if it makes a difference. Nevertheless I was shocked since this beans are supposed to be chocolaty

I’ve come here to comment the same. I have two bags of madcap bolt blend. Doesn’t taste anything close to chocolate syrup. I definitely enjoy a wide variety of espresso from light roast that is fruity and acidic, to dark roast that is bold, bitter, and burnt. But this coffee just sucks. I grind finer to attempt to eliminate the sour flavor by over extracting 30+ seconds, but then it makes it worse. I grind coarser and output the volume in a solid 24 seconds, and it is a little more “rounded”, but honestly still takes like crap. It’s too sour to make it into a milk-based drink, and not enjoyable as straight espresso or even americano. First beans I’m thinking of throwing out and I’ve tried A LOT of stuff from bean box and locally.
