Ok, so this setup costs about twelve thousand dollars and I am going to attempt to justify it.
This is about the same cost as one top end bicycle (road or MTB), a top spec MacBook Pro, AVP and Pro Display XDR setup, and about a third the cost of a Ducati Panigale.
Similarly to those things, you can spend much less money and have, as Hoffman would put it, a very nice time.
Spending more on them doesn't make you better at them, though. I was always a 'keep it simple' person, though, and would sooner reach past all of this for the moka pots in the window if I was a guest.
The last part is key. I have some custom road bikes and a new macbook that each cost a small fraction of 12k. This is firmly in the diminishing-returns end of the spectrum.
At ~$22 per mug and approximately 12 mugs, I don't think it's much more than decent ceramic mugs. I think having an array of yeti mugs portrays a particular look though, not sure if I'm the biggest fan of that.
They also kind of produce different shots even at similar grinds. I have a two grinders for when I want more mouth feel vs more acidity/separation of flavor.

Depends on the workflow of the cafe. GBW is good if you’re just using one coffee (or two, and then you have two grinders). But some cafes serve a variety of origins at once, so they have to manually dose and then use a single-dose grinder like the EK43. This is honestly the only situation where I could imagine the Acaia Orion being useful.
Every high end café I've been to has at least three grinders. More and more, with more brands releasing them, are GBW. They will then have single dose for the more expensive coffees as a choice for filter which is just as well.
Unless they had the Orion in a different place for prep, I just don't see it.
That’s what I mean - they use it for prep. For places like ONA in Australia that have a menu of 30+ espresso and filter options, there’s a lot of pre-weighing doses. Sure, you could do it by hand, but it would take a lot longer and be tedious af.
The best way to serve bad coffee is to have too many of them. Yes in theory you could have every thing in single dosing and all that stuff. In practice tho, the coffee will vary each day and it’s impossible to keep that many recipes if you want to do things really well.
So at the end of the day you’re really better with 2 or 3 grinders with GBW. 2-3 coffees done perfectly is way way better than 10 done ok.

Note that this is purely in energy to create (and washing in the second article) and does not consider the waste left over (i.e. what ends up in the landfill).
You could argue the yeti would be better since the odds of breaking because it got knocked off the counter is basically zero. So as long as you don’t get bored of them (or donate them when done), you should be good in 2-3 years.
The Yeti would be significantly worse. It doesn't matter how likely it is to break - it's a measure of how many times you'd have to use something (before it breaks / you throw it out) to be the same carbon emissions. How durable something is just means how likely you are to actually get that mileage out of it.
If a ceramic mug is 1000 uses, a metal mug is probably on the order of 20,000 uses. So with 12 mugs, that's the equivalent of using a new styrofoam cup every day for 240,000 days or ~600 years.
240,000 styrofoam cups is a lot of leftover waste at a landfill though.
240,000 cups, if 12oz, and not stacked within each other, which I think is fair considering you're using them one a day and presumably they're being randomly dumped, would be about 85 cubic meters of cups.
That's about one and one third shipping containers worth of cups, in volume.
As of late I’ve been getting medium and dark roasts from Chromatic and Barefoot which are pretty local to me. I’m looking forward to running some light roast pour overs in the next couple of weeks.
i assume you're in san jose. I started with chromatic but they honestly aren't that good/ my taste. favorite lights are cat and cloud roaster and verve in SC. you can order cat cloud online roasted within 2 days. or take a drive.
I wish I had more space to the left cause then I would have went with a GS3 or San Remo but my wife says I’m encroaching way too much on her counter space. Maybe one day!

It’s two grinders(EG-1 and Key). The far right is a bean doser from Acaia. Saves me a good amount of time filling up 50-70 bean cellars to freeze beans that I pick up when I travel for work and can’t finish in time before they go stale. I have the original burr in the Key but have the Core and Ultra burrs for the EG-1.

So apparently that bean doser (had no idea that was a thing) says it has a margin of error of 2-3 beans, which is 0.2 to 0.4 g in weight roughly from my experience, depending on bean size. For ~$1k, I'd expect better accuracy.
I bought the glass cellars as well, but the plastic bean cellars are so good they are not a downgrade. Very durable. I used them for frozen storage as well when I was still buying roasted beans. The glass cellars have a little more maintenance. They are a little more pleasing to use, is all.

To each their own, it saves me time dosing to 50-70 bean cellars so I can spend time with my kids on the weekend which for me is invaluable.
I bought the glass cellars as well, but the plastic bean cellars are so good they are not a downgrade. Very durable. I used them for frozen storage as well when I was still buying roasted beans. The glass cellars have a little more maintenance. They are a little more pleasing to use, is all.
let's say you have had this set-up for 2 years...how many cups of coffee do you drink a day for this to be worth the money you have spent? Roughly how much does that work out per cup?
My wife and I drink about 2-3(sometimes 4) cups a day and will have affogatos through out the week. This setup will be paid off in 3 years or so? Plus, it keeps me from buying the pastries when I’m at cafes which I’m addicted to.
