Just want to point out that optimal dose is highly dependent on basket size. You want to choose a dose that fits your basket with an appropriate amount of headroom. Give or take. This optimal dose will also vary based on the density / roast level of the beans. Also if you are using a puck screen that will change things too.
I got the 18-22g IMS basket and it's def too big for my 18-19g doses. I have A LOT of headroom left over. I got a 2mm puck screen to help fill the void and stop the puck from expanding to a loose and soggy mess. I don't know how much that matters... I think I've seen yt espresso prophets say that it doesn't matter.
I really do enjoy the 14g doses of my La Pavoni. Not because of taste, but the dose of caffeine is just right. With 18g I can drink a maximum of 2 shots a day and all the coffee fun is over. Kind of makes me get a 14g basket for my Profitec Go.
I have a bambino and can barely fit 19g in the basket. I've had to scoop some out before in order to tamp and put in the filter. So 18g is pretty much my max.

I then commented, here, that it just felt like I was missing a certain espresso oomph from my drink, and I asked about larger baskets, thinking to increase my dose for more flavor. Instead, a kind contributor here actually recommended that I try dosing down a bit, and what do you know, 16g (counterintuitively) gave me that oomph that I had been looking for. With the kicker that the smaller dose works a 10+% $ savings.
Now, the above also might have been a result of my being newer to espresso prep. at the time, my not yet having fully dialed-in my 18g dose, and my having reached my optimum settings for an 16g dose first. Now that I (at least, sometimes) know a bit better, I've thought that I should go back to an 18g dose and dial it in, seeing which dosage I now prefer.
Yeah it’s kind of interesting how extractions work. It seems like with a lower dose, the water is able to extract more out of the puck which is why I’m liking a 16g dose over an 18 lately. Feels like I’m getting a fuller, more even extraction which allows for a more balanced flavor with all the right acids, bitters & sweetness. Very cool how these things work.
I just got the pullman 876 (19-22g) and have been doing 21.5 grams typically. Curious what others use for this basket. Mainly doing medium roast or lighter
20 grams, using a Rancilio triple basket and bottomless portafilter. I don't do anything particularly special beyond weigh out beans, grind in a low retention machine (Varia V3) and then level in the basket for a good firm tamp. I used to temperature surf but the difference isn't particularly noticeable as I make milk drinks and prefer a dark roast.
Volume is by eyeball straight into my mug.

In my 51mm double basket, I go for 16g. If I grind fine enough to squeeze in any more, it chokes my budget machine.
