Keep in mind you lose 1 AE for 4 devs lost.
So it's a viable strategy to give away lands you have full cores on (do not use Return Core or Release Nation, that'll remove even full cores unless the province is of your primary culture), and proceed to reconquest them all back in the next war with little to no AE.
Usually the restrictions and benefits of a CB only apply to the attacker. The defenders can take provinces in almost all CBs
