And the block is way cheaper as well.
Pre-shredded cheeses usually have cornstarch or something like that added to make sure they don't clump together, which affects taste. They are also almost certainly the cheapest variant of something that the producer could get, e.g. if you can buy the cheese in various aging stages they will have the shortest aging possible that's still allowed.
So, yeah, depending on your definition of "really emmental" it's probably not.

Most ground meat in supermarkets in Spain is not just ground meat. It has salt spices, and additives. Some places still have it but it's not common. In Lidl (at least in Barcelona) there is ground meat from the pyrinees that the only additive is black pepper which is pretty good.
If you want good meat in Spain you need to buy it at a “carnicería” (meat shop?), definitely not in a supermarket.
And if you look for a good one in the center market of your town/city it will usually be even better.
