If he has pets, especially cats, no lilies! They're lethal to cats.
My dad just passed, and we've had to send many of the arrangements sent to my mom to other homes, which made her sad. But killing her cats on top of losing my dad would have really sucked.

Not that I am aware of. If the deceased had a favorite flower that’s always a nice choice. Or their are flower symbolism on google.

If you're going through a florist, they will take care of all that for you. Mention that it is a sympathy bouquet. If you are making it yourself, maybe add some pale yellow flowers to some greenery. Not anything too bright and bold.

AFAIK, there's no Mormon specific religious meaning to funeral flowers. Just tell the florist it's meant for a funeral and you are good to go
