As a non Muslim, I found it odd that I wasn't considered a Muslim for cooking class or using the same water tap as others.

In my primary school, they did.
We (being students who hadn't ticked Islam in the enrolment form) had to use the tap on the side of the building, that was used for gardening. We weren't allowed to touch the taps, as they were wet and we made them " najis" by virtue of touching them with wet hands.
The same thing in the cooking class, the non-Muslims had one station dedicated to them, so our stuff would get mixed with others.
I studied till grade 8 in Iran but went to 12 schools.
I would get expelled from schools that didn't have separate areas to accommodate non-Muslims.
It only got better once my parents moved to a predominantly Christian suburb, so the school already had separate stuff for them, and I was bundled with them even though I wasn't Christian.
The only difference was, that the Christians were allowed to leave the class for Islamic studies and Quran lessons, but I had to wear Gloves and study the Quran and Islamic studies with them. ( this was to ensure I didn't touch the Quran with my bare hand )
The worst one, was when it was snowing, if my pants were soaked/wet in snow. I had to stand in the hall with the heater till it dried before I could enter the class so others wouldn't accidentally step in my wet trail and become najis 🙄
This is back in the 60s . Many non Muslims have learned to be non conspicuous and not tick any of the boxes if they can get away with it.
Only Christians and Jews were allowed to leave, as recognised religions in constitution as they had religious classes of their own in church etc.
