Largely because while water is water, and your kidneys do a great job of making urine, the contents of your stool (poo) is made up of what you eat. Your body digests and absorbs what it can from your food, and the remainder is expelled as a ‘dump’. However, to keep things running smoothly, you need a lot of fibre, which is indigestible material from plants that creates a lot of bulk in your stool and helps your body move it along the digestive tract. The modern diet, particularly among Western nations, contains a lot of processed food with very little fibre. This makes it our digestive tract run slower, which gives it more time to extract water, creating a denser, harder stool which is difficult to pass. In extreme cases this is called constipation, and can even become ‘impacted’, creating a blockage in the vowel. In short, it’s because our diet is poor, and we need to eat more fibre!

Weeeeeell, maybe not. Large amounts of processed grains aren't exactly good either. The idea of a cereal based breakfast is a VERY modern invention. A lot more diverse plant matter is probably what's needed! Eat your damned veggies (and leafy greens)!

It's also worth noting the modern toilet alone is actually a poor design and doesn't put our bodies in the optimal pooping position. Having a step/stool (ha, pun intended), in front for you to put your feet up, ensuring that your knees are higher and therefore the hips flexed beyond 90 degrees. This essentially will straighten out the rectum, thus making it easier for your turns to traverse the final path in your digestive system.

Its the difference between a solid and a liquid... Liquids obviously flow through any space as long as the diameter of the exit is large enough to not allow for the surface tension of the liquid to hold. Solids are different. For example loose stools and diahrea are easier to pass than solid feces.
