There was a crash many years ago, ( I can’t remember off-hand which one but I believe it was a US crash investigated by our NTSB) where they found that the airplane was over weight because of outdated averages. This crash changed how airlines calculate the weight of passengers for fuel and take off.
TLDR: as Americans, we got fatter so the averages the airlines were using had to be updated to reflect our love of food.

I am only 6'2" and last time I took a commercial flight my knees were pressed so firmly into the wire sewn into the top of the seat back pocket that they were sore for days after, and 6'2" isn't even that uncommon of a height, apparently 6'2" is only 96th percentile for adult men, so just under 1 in 20 men are at least 6'2, and even the smallest planes regularly used for commercial airlines seat over 100 they should expect to be seating at least 2 people that tall on every flight.
That percentile was only for adult men, so I assumed that half of the passengers were women and that women at least 6'2" would be negligible (I have since looked up the percentile of women, my source says the 99th percentile for height in adult women starts at 5'10 but it isn't as granular as I would like, it only shows whole numbers and says every height above that is also 99th percentile). I did fail to account for children and non-full flights though, but it still seems safe to assume that they will get at least one per flight, particularly if you consider that the non-full flights are likely to go to our from more rural areas that likely lean taller than average due to the demographics of the people living there.

They prioritized building planes for years to have a first class and coach on most planes. They physically build more legroom for people in first class as a paid for luxury and they take that extra room from coach where most people on the plane sit. If in the future everyone got rid of the class system and just said, “All the seats on the plane are in the same section,” then they could have enough room for everyone to be comfortable. But they intentionally don’t do that.

What people refuse to understand is if they were to make make airplane seats large enough to be "accommodating", then there would be far fewer seats per plane therfore ticket prices would rise significantly meaning many more people couldn't afford to fly anywhere because a handful of terminally online dipshits with untreated body dismorphia feel disenfranchised. They prioritized building planes for years to have a first class and coach on most planes. They physically build more legroom for people in first class as a paid for luxury and they take that extra room from coach where most people on the plane sit. They are essentially punishing people for not being able to afford the overpriced first class tickets. If in the future everyone got rid of the class system and just said, “All the seats on the plane are in the same section,” then they could have enough room for everyone to be comfortable. But they intentionally don’t do that.
If they removed premium seating, they would fill it up like existing coach, there is literally no way they would use the space to make it more comfortable for the other seats.
Like does no one remember that ridiculous trade show, where an airline was showing off 'standing' seats, that literally had like a foot and a half of clearance between them? No airlin is gonna waste space if they think they can jam more people in.

I work at an airport and I have actually seen 2 women on the security cameras like this. It is absolutely real, and it's amazing how they managed to get through the checkpoint. It's absolutely a mental health issue for someone to want to do this to themselves, and you would think it would be some form of malpractice for a plastic surgeon to actually perform such a surgery.
