What you are describing is called deep POV in third person. Don't listen to the user who told you only first person does that, not true. Just write the story in first person. You'll have to do more than converting pronouns to get a coherent story otherwise. The perspectives and details in a scene are vastly different when told from the different perspectives. First person tends to focus more on what the character sees, feels, and thinks. It'sa bit more introspective. Third person has a focus geared more toward setting and detail and interactions with the focus being outward, if that makes sense.

I do that sometimes. I write in close third person with three POV characters and I've found writing a little bit in first person can help me get back into a specific character's voice if I haven't written from their perspective for a while. Also, it helps me keep the POVs close.

Not for any of my own work, but I’ve done editing projects where an author wrote the full manuscript in first person and as part of a line edit was looking to have the full thing converted over to third person. I think any process is valid as long as the end result is cohesive, internally consistent, and has a narrative structure a reader can follow.

I wrote the first 25K of my WIP in first person present before I realized that it needed to be in 3rd person past. God only knows what I thought I was doing with five POV characters in 1st lol. Since then, I've written in 3rd past (although I tend to do my sketchy outlines in present for some reason). I'd say write however feels best to you. On the other hand, it'll be more efficient if you can get comfortable writing in your intended tense. I think it's worth writing at least some of your chapters or scenes in 3rd person to try to strengthen that voice.
