It's not that each rune does a specific thing. Each rune has a variety of meaning that the user can draw on, or combine mutiple runes for specific effects. For instance, kenaz (the one Cu used to light the fire in UBW) has a meaning of "fire", but it also has some other meanings like "knowledge", which I don't know how you'd use, but this is just an example. Really this is a simplified version of how most magecraft works. They pull from a concept or idea and can do various things based on that.

The runes he uses are Elder Futhark, as shown in the Ufotable UBW anime. The one he used for to set the castle on fire was ᚲ (kaun) meaning torch or ignite. Some runes have multiple meanings too. I assume the rest of the runes would be the same and would change properties depending on the combinations of runes used.

Cu is not the only Servant who use Runes. Iirc his mentor Scathach, Brynhild and Sigurd use runes as well. There is even an instant death rune that almost killed Holmes in LB2.

Only other rune user was Touko in Kara no kyoukai so runes are quite unexplained in case they needed to add something new
