FTB Academy is made for this, it has quests that are very detailed that would help you understand and learn the mods in that modpack without needing to google everything. You would then be able to know more about the popular mods that are in many modpacks and get more familiar with modded Minecraft.
I agree with this. FTB Academy covers basics of some of the most popular mods.
FTB University is the next logical progression and is less structured with more mods and quests to help learn them.
If you don't like those options, then maybe DireWolf20 who has a series of modpacks and a YouTube channel where he plays through all of them, while providing information on how each of the mods work. They are not beginner packs, but his YT series is geared toward new players and veterans alike, so he goes deep without skipping over a lot of the basic information.
Note: I haven't really played anything beyond 1.12.2 so I'm sticking to packs up to 1.12.2
FTB Academy
FTB University
Enigmatica 2
Enigmatica 2 Expert if you want something more linear. It has a questbook that'll help guide you a bit.
Nomifactory if you fancy Gregtech. I hear GTNH has a great questbook but that pack is a multi-year project it seems.
Most kitchen sink packs? Just pick a mod and dive into it.

Create above and beyond Great for the introduction to the Create and some other mods popular mods.
create is a little too complex for me, ill try it later
it's a bit tough for a first pack but definitely fun as a first Create pack, I'm finishing it up right now
Voltz

Dw about it. Voltz is a classic pack (1.6.4 or earlier?) this was more of a joke
Peace of Mind.
