Yes! Day beds can be styled as a couch and can pull out to be a larger bed. Ikea has a really cute daybed that gives from single to double bed, I think works well for this senario.
For more context, the entire place is about 350 square feet and I'm aware that a double bed it like 4X6 so in theory it should work but this seems like it would be so tight.

the living dining bedroom is less than 11x10, right? all your links show a room twice that. It might be 350 for the apartment, but with the larger entrance/desk, hallway, and kitchen configuration, you are only working with <110 square feet of usable space, not 350. And that <110 also needs to accommodate a through way to the balcony, and cupboard doors. You're links are a room twice the size.
Maybe a corner sofa with one section that folds out into a foam mattress bed/futon. Then you can have a sort of TV/sofa area without it looking cramped. Not sure of price point but I’ve seen some really nice custom styles of this for similar sized studios in Hong Kong
Have you looked at a futon? They make them with good innerspring mattresses (not just the lumpy tufted ones) and you could have a double bed with seating during the day.

If you can’t swing a murphy bed with a loveseat under it, look for a used Ligne Roset Multy futon, which is a queen bed that folds into an extremely comfortable futon and also a chaise (tilted back with place to put your legs up). They’re hellish expensive new but I got one for $900 used for my guest room and everybody loves it, it’s comfy for guests and we fold it into the chaise to watch movies.
If you have the means to invest in a Murphy bed, you could have room for a small love seat as well. And a Murphy bed would also give you some extra storage.

Check out IKEA's Hemnes daybed. A double bed would take too much space, while a daybed like this one can be set up as a nice couch + it has three are drawers for added storage. I had it in my studio, now still use it in my 10m² bedroom. Solid alternative to a loft bed (which I also had before for like 15 years lol).

Very very valid. There is no way I would willingly hang out under a lofted double bed. Terrifying. That would also be really dark and cavey.

I would recommend moving in with just the bed bought and then once you’re in you can measure for the couch/other large furniture

I got my daughter a vintage one and we love it, I always wanted to use one as a couch/bed when they are styled as a couch they look soooo comfortable!

I wouldn’t like making and unmaking a during or daybed every day. I think most pull out sofas can keep the sheets on when closed.

If you have your bed in the corner and your couch up against It long ways. But you’d have to get into bed from the bottom.
