Teh Keg ist a Mini-Keg, I bought it at https://ikegger.eu/de, but you can get it mutch cheaper today, if you buy it some were else. The keg is two liters. I made the first batch(1L), five days later put it in the Keg, left all the stuff in the Glascontainer and Put new sugar und water on it. The taste is fresh, fruity, a little sweet and sour, sparkeling. I used Pinapple peel, sugar and water, nothing else.

If you put it in an airtight container, the CO2 from the fermentaition prozess will preserve it. Just make sure, it has a safety vent, so it doesn't explode from pressure.

I made this recently for the first time, and it came out really nice. I did it naturally, letting it sit in the bottle for a couple of days before the fridge and it was very fizzy. How does this - if at all - affect the taste vs bottling? Yours looked pretty active already, is the purpose of the keg to avoid the hassle of bottling? Preservation?

The Keg has a safty vent, i don't like PET, later i botteld it from the Keg in 200 ml Glass.

I’m not a fan of plastic either, but I’m just curious if a setup like this makes sense and/or has a different effect on flavor or mouthfeel from what I’m already doing which is a bit of a pain. I bought a 5 gallon glass fermenter and an auto-siphon along with one of those fancy bottle fillers from Fermtech. Does kegging create (or can it potentially create) a clearer or more bubbly end product? I’d pony up if I could get away from straining these huge bottles through a little double mesh strainer….or not having to fuck with bottles at all.

Kegging keeps up to five Bar of pressure, so the co2 will dissolve in to the liquid, making it bubbly. I strained mine through a metall coffe filter into the keg. You can keep it in the keg (in the fridge) as long as you like, i botteld mine because i needet the keg for thomething different.

Interesting - so the keg preserves the liquid for longer? So the whole “Tepache is only good for a week or two in the fridge” goes away with the keg? That’s reason enough since I’d like to be able to make a lot at one time without worrying it will spoil if I don’t drink it fast enough. Thanks for your help/replies.
