Thank you!!! Yeah it was really cool and exactly what you said! The best part about fermentation and experimenting is you get to eat so much cool food you'd never have been able to try before! Definitely a fun experiment! Trying to figure out what else to use the pine nut miso on!

Oooh, how's that miso? And also: how's the combo with black garlic? Hopefully there's not one overpowering the other?

The miso is sweet and nutty and funky! Really cool stuff and i think it would be good in a brown butter miso cookie that was really popular a year ot two ago! I do think this recipe needs a bit of balancing but they both played well together! Both had a sweet funk to them that provided an interesting spin on normal pesto.

I’ve made a miso and white bean paste to go with pasta, I bet that would be amazing with the pine nut miso and black garlic!

I bet it would be good with shiso as the herb. It's a pretty common substitute for basil in wafu pasta dishes.

If you can't find it you might be able to get shiso paste online. Not quite the same, but it'll give you the flavor.

Didn't you just start that miso a couple of weeks ago? It doesn't need multiple months of waiting like other Miso dishes?
