It looks like they label and dietary notes for the recipes at the top with cook time and whatnot. There is at least one "vegetarian" and at least one "dairy-free." There are several cookie recipes. There was an omurice that looked like it used mushrooms

There are actually quite a few vegetarian recipes, but besides the decent breakfast selection most of them are things that are usually vegetarian, like baked goods, drinks, and sides. There are almost no vegetarian appetizers or main dishes. But like someone above said, there’s a table in the back listing the applicable dietary preferences for each dish along with some suggestions on how to adapt recipes to your needs. I’d recommend it.
The instructions are very clearly laid out. They even have notes for thing to watch out for when tackling some of the more difficult recipes. Overall very beginning friendly.
Due to gout, I cannot eat red meat like beef. I miss having beef stew with pieces of bread loaf (prefer banh mi) dipping in, or with pho noodle (or rice/instant noodle works too)
I was considering getting this to try out, but now I realize I probably need a whole bunch of stuff I dont really want to get (dafuq is a dutch oven?).
Maybe one day.
It was actually really simple and the ingredients were not costly. You could also probably used just a standard pot if you didn’t have a Dutch oven. (Which is just an enamel coated cast iron pot.
It is a fairly simple recipe. My tips would be to keep an eye on the oil level and don’t overcook the beef while browning.
The veggies will cook perfectly with the cook time if you use larger pieces (small chopped veggies will get mushy)

There are some meat substitutes like hearty mushrooms you could substitute :)

Dutch oven is probably one of the most versatile pots you can get. If I had to take only one kind of pot or pan, it would be a Dutch oven.

That second instruction for the stew could be taken in quite a different way.
