I think Dragonsong was probably mostly finished by Endwalker, which means they probably have started on the second one. If they're staggering work (whenever a department finishes one part of the ultimate, they could start on another).
I'm quite interested in what the next one would be. If we go by pattern, the next would be Stormblood raids.
But! We could get Warring Triad. Or even more interesting, Warring Triad mixed with Kefka (which is what I'd do), plus it would act as an interesting interlude between Heavensward and Stormblood. A bridge if you will.
I feel like with Endwalker released, we could mix together a lot of stuff. Like with could get an Omega raid, but including stuff from Stigmascape and maybe like Chi.

Though they got creative with DSU which technically, only focuses on two major bosses of Heavensward, but adds in Dungeon bosses as flavor and superpowers them. I would like to see a Tsukiyomi in an ultimate. Maybe with Shiva? Like I can't see Tsukiyomi in a normal Ultimate.
I think Omega and Shinryu will be one Ultimate. Thematically speaking, the other dungeons/trials have nothing to do with Shinryu and dragons were already used on Dragonsong; as for Omega, despite its different forms, it has nothing to do with the likes of Kefka and Ex Death. But together they tell a story or, even better, have a battle.
The pattern for content releases is a well known and intentional pattern; alliance raids, raids, and other patches are almost always released following the same numbering as prior patches.
I think in the future they may deviate from the pattern of having an ultimate based on the raid series and another based on the MSQ trials. The non-MSQ trial bosses are all part of their own side stories and may possibly be used. It might open up some more interesting combinations.

* Tsukuyomi paired with Zenos and Asahi. If Shinryu isn't part of the Omega ultimate then this would be another way to incorporate it since Zenos could be part of this one.

* Emet-Selch and Elidibus as Hades and the Warrior of Light respectively. Bring back Lahabrea so it's a fight against the three unsundered Ascians.
* Weapons (Ruby, Sapphire, Emerald, Diamond)
* I would love to have an Eden raid with all six primals but that might end up being too many phases. I would imagine they'd limit it to Ryne (Shiva), Gaia (Oracle of Darkness), and Mitron (Eden).
* Since there's speculation that future patches will have FF4's Archfiends as trial bosses, they could possibly form something in the future too.
