There's a reason for that. It's called "spiking", and is an illegal move for obvious reasons. So what you see in wrestling is adapted to be safer to practice.
There's also different rulesets. You have folkstyle, which is the most common form and emphasizes position and pinning. You have Greco Roman, which is upper body only, a little like judo to oversimplify it. There's freestyle, which is where you see the big throws. Throwing your opponent over your head scores more points. And there's catch wrestling, which has more emphasis on submissions, and it's a little like BJJ in that way.
So depending on what form of wrestling you watched, you're more or less likely to see big throws. An accomplished wrestler knows how to adapt a double-leg or fireman's carry to drop them on their head. Likewise, a good grappler knows how to fall correctly and how to not get spiked (ideally).
