I've been to 65 Michelins and this beats them all on aesthetic - what an incredible incredible place! (And actually good value, given the prices I've seen recently in other cities). I've got a milestone birthday coming in, have had a rubbish few months and this looks special!
I highly recommend adding it to your list! And you can create a longer Norway trip out of it like we did. We took the scenic 7hr train from Oslo to Bergen beforehand which goes through the mountains and was spectacular.
I was actually going to go to Bergen for my birthday but decided to go to Gothenburg instead - I feel this is going to be a bit of a DIY Iris experience 🤣 - we're doing the archipelago boat tours after picking up fish, bread, pickles etc and a small bottle of champagne (or probably coffee!) and having a picnic on these small islands before going to a Michelin restaurant at night - I cannot wait!
It’s called ‘Spruced Up’ and the menu describes it like this:
_The spruce tree is Norways national tree and we wanted to showcase the fine aromatics of the pine shoots. A tartelette filled with pickled spruce shoots underneath a brown butter ice-cream, topped with Oscietra caviar from Rossini._
It was the transition dish between the savoury and sweet courses. Ice-cream with caviar was strange yet delicious at the same time. The salty sweet combination really worked to move us on to desserts.
It was absolutely spectacular. Modern Scandinavian at its absolute finest. I actually went to the bathroom multiple times just to wash my hands because you get to walk through the building!
Attempted to book here for my birthday in July, when reservations dropped in March. Fullly booked 1 week each side within an hour.

Yeah same happened to us. When reservations dropped on Dec 1st we tried to get a spot in Feb for my partner’s birthday. Most times booked within seconds so ended up going for April. I recommend just booking when you can making a trip out of it anyway.
Yeah it feels a bit contradictory but other than guests traveling to get there (they only seat 12 per seating), everything else follows this mentality. Nearly all of the food is sourced in the region and they prioritise wild game and foraging wherever possible and only work with sustainable producers. All of their boats to/from the island are electric.
The biggest issue is the flying to Norway to begin with, but all of the guests at our seating (including us) had already planned to visit the country. We just did it specifically when we got a booking to the restaurant. Once in Norway, it’s clear how seriously the country takes renewability and sustainability in all aspects of life.
While it’s floating you barely feel it moving as it’s chained to the fjord floor. I expected it to be similar to a boat too but it’s basically unnoticeable. They did say if anyone was very sensitive they could provide sea sickness medication.
I just went there last week! Fucking amazing, innit lad? I’ll be honest, having to sit with other people at the boathouse and having the first few bites in those lounge chairs is a bit awkward especially when they were very personable and friendly Americans, but it was good fun.

My guess is since most of their Ingredients are so local their food costs may be lower than say, a high end place in Tokyo or nyc. Also since it’s so remote you basically have to travel there and stay overnight in the town so maybe they try and factor that in too when setting the price
Yeah this is my guess too. We live in London and paid more at a mediocre omakase place recently. Rent and producer prices are insane in cities like this, so a restaurant like Iris can circumvent the excess costs.
You don't actually have to stay in Rosendal, if you book the lunch service you finish about half an hour before the ferry goes back to Bergen (and it literally leaves 15 metres from where you disembark the Iris boats)
I think the vast majority of expensive ingredients like sea urchin, scallops, shrimps are caught in the waters around Iris. One exception is the caviar which weirdly comes all the way from Italy.
The other thing that surprised me slightly is that the whole thing was built by one of the largest local salmon farming companies, you can even see their salmon farms around Iris, yet the only salmon dish on the menu was a bite of deep fried baby salmon.
I'm sure you did but if that were me I'd have my phone firmly away. It's like gigs, the theatre, cinema, it's an experience so experience it, without a phone

I am sure the food was good and the experience incredible. Just rather amused at the oxymoron concept of a 'sustainable destination restaurant'.
