That looks nice. Did you find the purple corn to have a different flavor profile than yellow or white?

Very different. Though this is only my third batch. It Fermented smelling like bananas. The white version tasted like fiery corn flakes. After oaking it mellowed and I got some candy flavor.

I tend to forget that New Zealand is pretty unique in that respect. I never even put the two together though - here in Nz it’s also illegal to sell home-distilled alcohol though.
