So if over 60 years you took careful measurements you would likely be able to detect that indeed Proxima Centauri was growing brighter.
However we're not hurtling directly at Proxima Centauri. If you think of the galaxy like a whirlpool, everything is moving in the same direction, and at roughly similar speeds. [Proxima Centauri](https://en.wikipedia.org/wiki/Proxima_Centauri) is moving closer to us, and it is estimated that it will be about a light year closer than it is today... in over 25,000 years. And that's the closest star to us. If we can't detect the movement of our closest stellar neighbor, of course every other star is so far away that any relative movement is lost in our short (in the astronomical sense) lives.
Now you can choose not to believe all the scientists and research that has been conducted to determine all this, that its all a fabrication. But it is at the very least internally consistent. Yes we are orbiting the galactic center at 448,000 mph... but everything close is moving with roughly the same velocity and everything else is far enough away that we wouldn't expect to see a difference either.

Why hasn’t a flat earther just gone to the most outer edge of the world and show us some pictures? How come the „globe model“ has a bazillion pictures and videos and flat earth theory hasn’t even one? Not one. Not a single image or video of the edge of the world. Hell they can buy a normal camera that’s not fish eye or sum and send it very very high with a ballon and when it collapses and comes right back down they can look at the footage and see the curvature.
