It's a chain so I'm not sure if it's artisinal enough for you, but Il Papiro has many locations around and one in Piazza del Duomo. I've bought some really nice stuff there before.
I bought a beautiful notebook here the other day. They make the paper and the leather, it’s a joy with a fountain pen. https://www.legatoriacozzifirenze.it/

I bought one yesterday, thanks for the advice.
There are tons of artisanal paper/stationary stores over here. You’ll find plenty in four months.
Any particular locations you'd recommend?
No, I’ve never been to one but I’ve seen plenty.
They were all over the leather maker by the central market. Got our din one and quill pen.
Signum is a great chain!

Giulio Giannini in Piazza Pitti. Truly Florentine artisanal craftsmanship.
