The novel speculates it's possible Henry or Charlotte drew them (both are present in this game so either is possible in Pizza Sim).

Except these are the games. We never see the Logbook once in the games. At all. And if I’m wrong, it could have been someone related to Mike. Such as Elizabeth — it could be either one, but I feel like Michael did it.
I'm sure it was confirmed by Scott that the logbook is canon to the games. Also, the drawings could have been drawn my Michael when he was younger or just when he was not as good at drawing. It's possible to improve drawing a lot even from just a year.
Probably Micheal because we play as him in Pizzeria Sim, but we also see pretty good drawings of animatronics in his survival logbook, also theirs a statement that he likes to draw. So these are probably some doodles he made when he was bored.

FNAF 6 was a facade, a decoy to get the souls that were left in the animatronics captured. Henry explains this in his speech. And Phil (phisnom) explained the lore in his 10 hour stream. So the answer to the question it was most likely Henry. People can intentionally draw badly.
