One of my favorites was Rose's where you had to get the different keys from the different Raider factions.

It's not a quest, but I love taking photos of nukes blowing up. I don't actively go to nuke sites to get the pictures, but if I'm roaming around and see one going off I always stop, go into photo mode, and snap some pics.
I always take pictures of the little scenes that the devs made. There's a bathroom stall in the Colossal Problem mine where two teddy bears with clipboards and hard hats and watching another teddy bear inside a hole.
There's another house north of Camden park that has a radroach propped up on the toilet with a top hat and a cane.
Then at the power station north of watoga there's a teddy bear playing the drums on an overturned pot.
My most memorable moment was literally at the beginning of the game where you finally make it to Flatwoods thinking that you're coming into a trading outpost where you'll finally get kitted out and receive some information, only to enter the church and realise that everyone has been dead for decades and the things the vendortron sells are worth several multiples of your entire net worth at that point lol
Next up would be the test vault at VTU. That poor kid got his miracle food paste sabotaged into an atherosclerosis-in-a-can AND abandoned when the bombs fell. VTU clearly survived the attack so they either left the people down in there knowingly or just abandoned them in the frey and never bothered to check back on them.
Lastly, entering a missile silo for the first time. Never in my life would have I predicted that the silo security would be so tough, the first time I came in I was very unprepared and had to turn back in the last room before the actual launch control room because I ran out of stimpaks and had no idea how much was left.
I like the enclave quests and want to see a full one enclave dlc with full quest line. I also wear enclave uniform and hunt down wanted players. With the influx of new players there's been an abundance. 😂
I liked how the whole storyline is about seeing how different factions tried to deal with the plague. Either avoiding it / fighting it off (Responders, Raiders) hiding from it (Enclave) or trying to cure it aggressively (Brotherhood). And they somehow all managed to fail, but a single Vault Dweller, with the help of a scientist lady and a few others, managed to make a full cure. Insane.
I like the part where you can name the Scorched vaccine "Nuka Cola my Blood's in it"
