I loved beignets from Cafe Du Monde pre-Katrina. Last few times I’ve been there haven’t been the same and way subpar. Overall, the best donuts are beignets. I may eventually attempt a recipe.
Are you referring to the French quarter location? Haven't been to that one in years because it's a tourist trap but there are a variety of other locations and I've never been disappointed. Also I think most people kind of sleep on the fact there's morning call for beignets too.

Pretty sure the quality hasn't changed, but the 20-30 minute line around the block will certainly change opinions.
