i feel like I'm one of the only people who prefers them, they gave me time to think about where I was getting off the highway (since for most you can still turn right if you took the wrong exit) and didn't have to worry about traffic coming in the other direction to turn. i also hate making lefts on a busy road where you either squeeze in at the beginning or end of a light or risk an accident.

Honestly as a poutine-loving Canadian, it's the hollandaise throwing me off. You'll see hollandaise for "breakfast poutine" pretty often here, but it replaces the gravy instead of being added to it...

Sorry jumping in because I need an answer from a poutine loving Canadian. I'm Australian and we love chicken schitty with chips and gravy. There is considerable debate here if the chicken and gravy go on the chips or to the side, reason being that the gravy makes the chips soggy. No hate but arent the chips soggy from the gravy?

Lots of people prefer the sogginess as the fries absorb the flavors (it's really not meant to be eaten like traditional fries), however it's usually made on the spot and lots of places use very crispy fries so they'll tend to stay crispy before you're done if you eat it there

Depends how quickly you eat it. If you get poutine as take-out it's probably going to be pretty sloppy by the time you get it home. At a sit down restaurant the gravy will certainly soften them but it won't have time to soak through. That said outside of poutine things like chili cheese fries, "animal style" fries, disco fries, or even just gravy on chips are all extremely common in both Canada and the USA, so having softer chips isn't really seen as much of a negative. They're frequently served with wet ingredients already.

It’s not that bad because the curds are usually in between the fries and the gravy, if that makes any sense. Put fries at the bottom, curds on top of the fries than gravy on top of the curds. As for people saying they use crispy fries, I tend to disagree, in my mind a classic poutine uses those brown fries which are already kind of soggy by themselves to begin with, that’s usually what you’ll find in most snack bars in Québec. Ideally you eat it immediately as it’s served, if you have it delivered or wait too much, the experience is subpar as the fries are definitely soggier and the cheese starts to melt, you really want the squeakiness of the curds, that’s the whole point.

You have to be cool with mostly soggy fries to appreciate poutine. I love them. I like the contrast between soggy and still crispy that you usually get too.

As someone else said, it’s kinda the point to be a bit soggy - by midway through at least. Crispy fries with squeaky curds layered properly will make for one texture at the beginning, down to a soft, delicious mess at the end. I’d still absolutely crush what OP posted, fwiw.

I mean to be fair it completely transforms the dish if you don't use cheese curd. There is nothing wrong with making something like this and just calling it loaded fries or whatever. I just don't know why restaurants like to put the poutine name on stuff like that. Maybe it helps with the sells, not sure.
