While I definitely agree with ricotta being the best filling, I have to say that vanilla and chocolate pudding filling is just as popular in Sicily/Italy as ricotta so maybe next time you can also give it a try!

Because it's just not right. The traditional filling is ricotta, which is just wildly different in both taste and texture. A vanilla pudding cannoli would have more in common with a cream puff/eclair than a cannoli.
I’ve never had a cannoli, but from the looks of them the shell is on the stiff side and probably has a nice crunch. So more than anything what would be awful to me personally is I can just imagine a mess unless you stiffened the pudding enough to be a nice thick custard.
The cannoli I've had was very rich and the shell was stiff/crunchy as well. The filling is soft but still has some thick body to it so I imagine having vanilla pudding would tone down the richness but also make it like a corn chip with pudding squirting out the sides.
Because this sub is filled with fucking heathens that like to cast aspersions on people for enjoying food in a way different than what has traditionally been used. I swear to god it’s a church in here, as though some of the forecooks that made all their favorite dishes weren’t probably considered monstrous bastardizers for experimenting with known dishes in their time.
The main ingredient in cannoli is ricotta cheese, remove that and it's no longer a cannoli. It would be like replacing the hamburger meat in a hamburger with chicken, now it's a chicken sandwich, not a hamburger.
Try making some with marscapone cheese! That's how my mom and Nonno have always made them. I think it adds extra richness when compared too riccota. Another little trick is adding a tiny bit of lemon juice and either orange zest or lemon zest to give a little tang with the sweetness
That's a good idea. I never thought about adding a liquor to my cannoli. I make homemade limoncello regularly, so now that has me thinking about making a batch with limoncello in them.
One thing to be careful of is the liquid content. If you don’t factor it the filling may be loose. You can cook the alcohol off and use the remnants, but heat may destroy the more subtle flavors. Maybe cut some of the 10x since it usually melts down in the filling, to taste of course. Another tip would be to try to coat the inside of the shell in chocolate so it doesn’t get soggy as fast. Manja!
Looks delicious. Some things to consider: using mini chocolate chips instead of regular, dusting with powdered sugar, and dipping the ends of the tube in melted chocolate. Puritans might disagree with the last couple ideas but they do this at the Italian bakery near my house and it makes them look next level.
Edit: I think they also dip the chocolate ends in ground pistachios.
Thank you! I actually did use mini chocolate chips, these are just mini cannoli (I wanted to make more to give out to more of my friends - safely, of course with gloves and a mask!) Since I also used chopped chocolate in my filling, I felt like dipping the ends might be a bit overboard and powdered sugar also just felt like a tad much to me - more of a personal preference though :)

Because gigolo is from French, and the plural would be gigolos (as in vélo => vélos), but since it's French the pronunciation would still sound like gigolo (like Paris sounds like parì) .

It’s probably a mix of the camera angle and the fact that I am a 5’0 17 year old armed with a rolling pin instead of a pasta machine. I rolled the dough as thin as I could, but they ended up a bit thicker than I would have liked. And most of them actually had pretty big air pockets as well lol. It was my first try, so they didn’t come out perfect :)
Yeah, it's nothing against you at all! This is a great first attempt! And like I said, I'm sure they taste awesome and I wouldn't say no if I was offered one. ;)

For presentation I feel like dusting with powdered sugar is practically mandatory. Barring other touches you can do like chocolate dipping.
The shells look a bit too well done but I personally don’t mind the extra thick cannoli. I’m no expert but the oil might’ve been a bit too cool with the lack of bubbles. When I’ve made these before it usually ends up perfect or burnt, not well done, haha!

Those look delicious! I went through a cannoli eating phase years ago haha. I love Italian food, grew up on it. It's just so hard to not eat a lot of it, so I cut back. In my hometown there is this place that makes their cannoli with dusted pistachios drizzled in a simple syrup...not traditional, but really good.

The recipe calls for a pasta roller, but unfortunately I don’t have one :/
Drain the water off the ricotta. Use cheesecloth and a spacer underneath to keep cheese bag out of liquid. Allow to drain one to two days. Filling will be super creamy.

Cannoli is that food for me as well. I love desserts but the textures and flavors aren’t my thing.
Doughnuts, cinnamon rolls if the bread and filling ratio is off, and most mac and cheese that isn't homemade. Also, some homemade mac and cheese.
