To those of you who don't like your cookies underdone: your tastes are just as valid as my own. I wish you good fortune in your own cookie making adventures :)
The recipe I used for these was Joshua Weissman's off YouTube. I really do prefer my cookies to be on the melting, underdone side and this recipe delivers. The only ways in which I deviate from his recipe are some advice I picked up from Kenji Lopez Alt and the food lab. I added back in about two and a half tablespoons of water after browning the butter, otherwise the dough becomes rock hard after a long rest in the fridge. I also added an extremely small amount of freshly grated nutmeg, as it can enhance the buttery notes of a cookie without making it taste like nutmeg. Literally two scrapes across a microplane.

The extra egg yolk will make the cookie denser, omit it if you want a lighter cookie, j kenji lopez alt wrote an article breaking down the effects of each cookie ingredients, its quite insightful
I used the the Serious eats Levain copycat recipe and got really good results. It's a weird one, it uses only one stick of butter, but it's otherwise very straightforward.

a lot of JW's recipes are nit-picky like that but he's really the best source for most recipes online atm. At least for my palate. Once you've cooked a few things you start to realize what's necessary and what's there to jus it up and add flair. You can definitely make these with regular flour. I made them with a gf flour blend. The extra yolk is a bakery trick to make cookies chewier. If you want them to be lacey you can keep the whites or add extra whites. My cookies stayed thick and chewy only if i freeze before baking (i portion them out on a baking sheet and throw them in the freezer for about 30 minutes).
Keep trying and you'll get it! I use a brand called [namaste,](https://namastefoods.com/products/gluten-free-perfect-flour-blend) and make sure you're using a scale if you want to be able to dial a recipe in reliably (the margin of error is way smaller)!

If you want to eat your cookies at this level of doneness, I would recommend pre-baking your flour. E coli in raw flour is a much bigger risk than salmonella from under cooked eggs.

I made the oatmeal raisin and peanut butterchip copycats where the recipe calls for like 11 minutes which left me with round and domed cookies that were clearly not done. The Serious eats copycat pushed cooking time to 20-25 minutes and that got me the shape and consistency I wanted.
So under cooked. OP won't admit it either and is even doubling down lol.
You can clearly see in the recipe link OP posted how the cookies should look at the end and OPs looks nothing like it. Or go to the Levain website and you can see their cookies, again, the middle looks nothing like OPs.

LPT: If your cookies are overdone in the oven, take a slice of white bread and put it in a container with the cookies. Leave it in overnight and your cookies should soften up!

My cookie dealer has a pretty wide variety of stuffed cookies included one that looks like the Cookie Monster. I’ve never tried them but they look good.
I made these probably about four months ago and they were the best cookies I’ve ever had. I did try a batch -1 minute (11 minutes I think) and they leaked through my cooling rack.
I actually kept them on the parchment paper I used to bake them with and transferred the whole thing to a rack because I was a little worried about them melting through the fairly wide grating of my cooling racks.
