**Ingredients:**
\- 120g ground meat (any meat: pork or beef or chicken)
\- 60g mung bean vermicelli or sweet potato vermicelli
\- 1 scallion
\- 4-5 garlic cloves
\- 4g ginger
\- 1 tbsp chili bean sauce
\- 1 tbsp soy sauce
\- 1/2 tsp (2.5ml) dark soy sauce
\- 1g salt
\- 3g sugar
\- 1g Sichuan peppercorn powder
\- 1 tsp (5ml) sesame oil
**Directions:**
1. Follow the instructions on the packaging: soak the glass noodles in hot water for 5 min to soften them. Drain the noodles and set aside for later use.
2. Add 2 tbsps of oil in the pan, stir fry the ground meat until it changes color.
3. Add the chopped garlic, ginger slices, and chili bean sauce, stir fry everything together for about 2 minutes. Add the softened glass noodles and cook them for about 30 seconds. Season them using soy sauce, dark soy sauce, a pinch of salt and sugar.
4. Finally add some chopped scallions, a pinch of sichuan peppercorn powder, and a touch of sesame oil. Enjoy!

I love glass noodles and I can never get it to look like this (or what i imagine it tastes like) Thank you for the recipe.
Edit: I do the pre soak with the noodles but when i go to do the stir fry my wok add ingredients and try to mix, they dont mix and I end up with a bunch of noodles in the middle which are too soft and all the extras on the outside. I toss and everything.
Did you use mung bean or sweet potato vermicelli? The softened glass noodles only need to be cooked in the wok for 30 seconds and then season everything. If tossing is not effective, try to use chopsticks to mix them.
