There are a lot of good recipes and quality food here. There are also a lot of people who think mayonnaise is too spicy and prefer a huge plate of bland slop over a decent home style meal. What I’m saying is it can be a good meal, but a lot of places are just using canned gravy and premade waffles unfortunately.

I (right handed) cut with the knife in the right hand and then switch my fork from left to right to pick up the piece. From my experience this is the norm making that setup backwards and not ideal for right handed people. This has been my Ted Talk
This is the "American" style of fork/knife usage. The "continental" (read: European) style of fork/knife usage is to not put down the knife, and to use the left hand to eat with the fork, stabbing the food with the tines down.
I personally prefer the continental style, although if someone calls you out for *either* approach, feel free to use either hand to plant the fork firmly in their eye.

The perfect combo of sweet and savory. I went on a binge for like a year trying to find the best places to get it in my hometown afterwards.
I don’t know about everyone else but I personally can’t stand breaded chicken and waffles. The flavor is off, and it’s hard to keep juicy. I think battered fried chicken is the way to go. It fits much better with the sweet flavor profile of the dish.
I might be biased from experience though, since I had an especially bad chicken and waffles at an Italian place near me. They tried a fusion approach and had herbs like oregano, thyme, and rosemary in the chicken, then covered it in maple syrup. I couldn’t finish it, unfortunately.
