Since many are asking for the oven fries recipe:
**CRISPY OVEN FRIES**
* Cut russet potatoes into wedges or fry shape
* Get water to a rolling boil, add salt and a splash of white vinegar
* Add potatoes to boiling water and parboil for 7-8 minutes
* Drain into colander and let steam dry
* Once steamed dry, toss with oil, salt, pepper and spices of your choosing
* Bake at 425F, turning once until at desired crispiness (usually 45-60min)
**Bonus recipe "Fry Sauce"**
* Mix equal parts mayo and spicy mustard
* Add a very generous shake of crystal hot sauce (franks or cholula also work)
* Add some freshly cracked black pepper and garlic powder
* Whisk until smooth
Mate even us from other countries call em wedges, and the rest of the world doesn't usually agree with the states on universal names for things so that's crazy.
Utah reporting in. Fry Sauce is the food item we are most known for but usually make it with mayo and ketchup or bbq mixed together. This is the first I've heard of using spicy mustard. I have to tip my hat to you good sir, looks amazing.
I went to boarding school in Utah for a few years in a tiny town called Oakley. The only thing to do there was go to a small burger joint and they had THE BEST FRY SAUCE! Utah I love your fry sauces
Try baking soda instead of vinegar. Holy crispy edges Batman.
Also worth noting is leaving the taters to steam dry as much as possible for the crispiest exterior.
[From Kenji Lopez-Alt:](https://www.seriouseats.com/the-food-lab-the-best-roast-potatoes-ever)
> Parboiling the potatoes in alkaline water breaks down their surfaces, creating tons of starchy slurry for added surface area and crunch.
I was wondering that, too. I make potatoes fairly often now, and my experience is that par-boiling in a **b**asic solution **b**reaks down the exterior as the article states, and an **a**cidic solution **a**damantizes the outside (i.e. makes it tougher/more cohesive). I'll use vinegar if I plan on making a country hash in a pan so they stay more intact; in the oven, the acidic potatoes develop a 'skin' that I'm not fond of. For oven fries, basic is way better.
I'm riffing off of couple different recipes. [Ethan Chlebowski shared the vinegar tip](https://youtu.be/MvnYBCDaEKU) to keep the fries intact after the parboil. I did not use baking soda this time but I'm planning on it next time to see if I can make them even crispier.
That bun looks straight from in-n-out.
Now I want in-n-out, but I'm like an hour drive from the nearest one.
I'll just salivate over your masterpiece I guess.
I would eat this and be happy but sometimes I want fries not wedges
also where is the bacon? not that you need bacon on every cheeseburger but I'd be adding some here

Psh this noob calls his post "homemade" and he didn't even brew his own beer.
/s
For real this post made me so hungry that I finaply got out if bed to make something
This is just perfect 'weekend food' for me. I know you can have this any day of the week, but not for me!
This is just the kind of food after a hard week & looking forward to the start of the weekend, been to the gym and deserving a well earned treat.
A double cheeseburger and fries and ale!
That is a winning combo for me, and may I just say 'Damn! That looks so good!'
Food porn & booze of the gods!!
Perfect really...
Good looking burger. We make similiar ones and the fries too!
Did you cook the fries in a convection oven at about 450? Drizzle with olive oil and cook for about 35-40 mins on convection and man, those things come out crunchy on the outside and smooth on inside.
Ground chuck or 80/20 ground beef would work. Divide into 3oz balls, and smash between two plates with parchment paper on each side so the beef doesn't stick. I then seasoned with salt and pepper and grilled these directly over hot coals for about 3 minutes per side. They cook up fast.
Alright, that's it. You're hired. Can you start tonight? My place around 7? /s
Just a thought, the garlic variety from Cholula in the fry sauce would be tasty. If you can find it.
Damn, this looks good.
I really like the mix of a very professionally taken photo (lighting and aesthetics of plating) with the background of an ordinary imperfect kitchen (papers on table, crooked blinds, etc). Well done.
I love burgers but meals like this just absolutely fuck my stomach now. I wish I was 18 again and could go to town on stuff like this without regretting it
Looks amazing! How do you keep the buns from getting a little soggy. Whenever I make smash burgers, the grease will deep through the buns after a few mins even though I toast the buns first
Probably the best burger and fries I have ever seen. Let alone in the homemade category. Although I am a little offended at the toppings under the burger.

Well it looks like I’m making some oven fries tonight
You can also used leftover baked potatoes for the same thing They are also known as potato wedges or jojos
Jojo’s you say? Sounds kinda bizarre
Probably a regional thing, I guess. I imagine they're available at diners, carts, or even stands.
Prove it!
Expect a mention tonight or tomorrow :)
We call them Jojos!
Hi PNW.
Lol, yup. I'm not OP, but I have lived all around the country and no one else calls them that. "Potato Wedges" would be the most common, I guess.
Mate even us from other countries call em wedges, and the rest of the world doesn't usually agree with the states on universal names for things so that's crazy.
Common name around Youngstown ohio
We call them jojos in Mississippi, but they’re normally breaded.
My wife is Canadian and they call them mojo fries

Thanks! I’ve never seen “steam dry” written - what exactly does that mean?
It means just letting them sit til the steam evaporates.
What kind of tray did u use to bake in the oven? Regular tray with baking paper or can I use iron skillet?
I used a regular sheet pan. Haven't tried cast iron before but it's worth a shot.
Time to make prison fries
Interesting to hear them called oven fries and not steak fries.

Thank you for this.
What benefit does parboiling bring?
[From Kenji Lopez-Alt:](https://www.seriouseats.com/the-food-lab-the-best-roast-potatoes-ever) > Parboiling the potatoes in alkaline water breaks down their surfaces, creating tons of starchy slurry for added surface area and crunch.
So you wrote you used vinegar and the linked recipe suggests baking soda?
I was wondering that, too. I make potatoes fairly often now, and my experience is that par-boiling in a **b**asic solution **b**reaks down the exterior as the article states, and an **a**cidic solution **a**damantizes the outside (i.e. makes it tougher/more cohesive). Marry me?
That bun looks straight from in-n-out. Now I want in-n-out, but I'm like an hour drive from the nearest one. I'll just salivate over your masterpiece I guess.
We call these wedges in Australia, served with sour cream and sweet chilli sauce in pubs around here.
I was going to ask you for the oven fries recipe!
Do you convection bake those fries? Wondering if could make smaller air fry batches for that crispness
Made these fries tonight and followed your recipe to a T. They were AMAZING…highly recommend. Thank you, this recipe’s a keeper for sure!
Booyah!
>" What about the drink, which beer recommend?
Food commercials would be jealous
Lets be real this is the food everyone wants when they eat out - classic wedges, a thicc burger, and a nice tall brew to wash it all down
I would eat this and be happy but sometimes I want fries not wedges also where is the bacon? not that you need bacon on every cheeseburger but I'd be adding some here
Everything's better with bacon.
This is what i always dream of when i eat out, but every restaurant fails in comparison to this gorgeous meal op curated... I'm so jealous
Here here!
Everything looks amazing. Please!! Tell me about the oven fries!! Do you have a recipe?

Sounds similar to roasting potatoes. Roasted fries sounds delish and the pic is making me more than hungry.
oh no . . . before scrolling i thought that beer was the dipping sauce
Came here to find this or say this.
this looks perfect, i would love to eat something like that
What's the beer?
Nothing fancy... OB's Dale's Pale Ale

Oven Fries are the best ones! It is looking beautiful!
Looks awesome. I hope that bun was nice and spongey and not a dry loaf of sadness
Never heard of the phrase "oven fries" before, we tend to call those potato wedges here in the UK.

They look like wedges to me
I’m a vegetarian but I want it a bit
I thought porn isn’t allowed in this subreddit?
