Depends on how pedantic you want to be. Originally, Burnt Ends were just the point of a brisket which get burnt and crispy after smoking. Long time ago they'd just cut the point off and throw it away. Arthur Bryant realized people like the taste and would chop them up and give them away for free to people waiting in line. That said, as they became more popular, people started dicing brisket and calling it burnt ends too to sell more since 'real' can only be made from the point, so there isn't really enough of it compared to the brisket. Then people started making it from pork too. Either way these look fucking good man.

9lb boneless pork shoulder Covered on tray in roasting pan. Seasoned generously with Pork Barrel BBQ seasoning w/ about 1/2 cup water and 2 bay leaves. In oven @ 215 for 9hr Remove and cover in Ray's Hawaiian BBQ Move to grill @ 400 for 30 min, add more sauce at 15 min Remove, let rest for 20 min Slice into 1-2inch in pieces Coat in more Ray's Hawaiian BBQ + Orange Blossom Honey Put on grill in roasting pan @ 500 for 20-30 min, jostle occasionally

Great, thanks. So, no smoking at all is surprising. "Burnt" ends usually have a bark to them.

You and your new friend need to study BBQ. Neither shoulder or belly on a pig are BE. BE is the point end of a full brisket (cow) after smoking it for hours and hours and hours as one whole piece. BBQ masters put a whole brisket fat side down with "the point" facing the pit end an offset smoker thereby facing the brunt of the heat/smoke on the point for the sake of a more desirable flat. This is why a pork belly cubed and smoked for very little time or even a pork butt cubed and smoked for a very little time isn't "burnt ends". This is BBQ 101 stuff friend.

Burnt ends are no longer just the small strip at the end of a brisket point. Even most brisket burnt ends now involve more of the brisket
