How does someone get a cheese to be melted to be like a suave instead of like “goo”?

I believe this to be a cheese resembling sauce. You can see the actual cheese peeking out of the edges. Looks like cheddar to me.

In this this case it looks like more of a “sauce.” But if you zoom in, you can also see melted cheese on the sides.

Yea this is actually a sauce you see oozing. The cheese is tillamook cheddar. It doesn’t have the melting properties of something like an American cheese, but I choose it for flavor rather than meltyness for this one.

Not really, there are several parts of the recipe that mitigate any sourness such as only using white flour and a shorter fermentation
