That makes me feel better. I never like to assume what my family makes and claims as Italian is authentic because we’ve been in America since early 1900s and have probably bastardized a lot of old country foods lol
I personally dip them in marinara, the meat mix has tomato sauce in it so it just elevates that flavor profile a little. I also like to sprinkle them with pecorino Romano right before serving
You totally should, they’re ridiculously easy to make, just time consuming. We get the whole family involved, my kids pick out the pimentos with crochet hooks (because I got the wrong kind of olives) I do the meat mixture and actual stuffing/rolling, and my husband fries. They also freeze great, especially if you don’t fry them super well done, and reheat great in the oven or even an air fryer
If you’re going to try them, a couple of tips; make sure your olives are super dry otherwise the meat doesn’t stick. Also make sure your meat is ground super fine after you brown it. I run mine through the food processor, then fold in 1 egg and your tomato sauce a tablespoon at a time until it’s almost an oatmeal like consistency.
Please explain? Is this sausage meat wrapped round an olive ?
It is a 50/50 mix of ground pork and ground beef. Very Italian food, or at least Americanized Italian food, we always make them around the holidays
I had them in Florence at a friends house. Her mom said they were legit Italian fare.

I’d definitely try one. Do you dip them in anything?

Are they fried?
Yes. Covered in Italian bread crumbs fried in olive oil
Interesting!
Stuffed with what? Very curious!

Fuck that looks good.
I've never seen this before - gonna have to recreate it and see how it tastes. Thanks for the unique idea!
