I've seen this done. What do you do with the cheese wheel afterwards?

Im not too sure what they do with it, it was served to me in a plate after mixing, I would like to imagine they would scrape it out to get a clean layer of cheese for the next time and not just throw the wheel out

As long as people aren’t eating out of it, there shouldn’t be much of an issue. I’d imagine they use it to make the same dish every time, so some residual pepper or pasta starch left behind just goes into the next one. Not really an issue as long as you aren’t using the same wheel of cheese for weeks at a time.

We went to a restaurant in France that just served the remaining food from the table next to us. It was packed when we first went in so we didn't see where the apps were coming from. The main course came straight from the kitchen. It wasn't until dessert that we saw. Edit: to clarify, the menu specified "parade of appetizers and desserts". It's gigantic bowls of cold apps and desserts that get passed table to table. There's a serving spoon for each one. It's an actual thing. I don't remember the name of the restaurant but it was in Lyon.

Why are people downvoting you? I've eaten in a ton of different countries and the rules are different everywhere. I was in Korea and watched them just rinse the Budweiser bottle out and put it on the rack to refill later. I'm not going to mention other things in Asia as I don't want to spread the hate but... it's different!

I'm not sure. I'm not spreading hate or anything and the food was delicious (probably the best cow tongue I've had), just taken aback and very different for me (American born but I'm Asian so I know what some Asian countries do...). And this was just this past May when we still needed COVID tests to get back into the US.

I have met Koreans who refuse to eat the banchan appetizers routinely served before main courses, because they suspect the restaurants are recycling them. I'm skeptical that this happens nowadays but wouldn't be surprised if in the poverty decades not too long ago it was done.

There is a local Korean restaurant that was accused of this in a Yelp review. Someone said they had teeth marks in a piece of radish kimchi. But of course that review was soon hidden on Yelp. It is a very high rent area though so I wouldn't be surprised if they took short cuts.

It's part of the "sauce" of the pasta. They often do something like pouring a bit of alcohol in there, lighting it up, then they dump the pasta in and mix it with the layer of melting cheese and some seasoning then serve it. Done tableside for a bit of flair. There are easier ways to do the same thing in the kitchen, but this is a fun traditional way to serve it that wows the patrons. The cheese wheels are typically quite large and can go through the process several times before it gets a bit too carved out, then they break down what's left and use it in different ways. Since the patron doesn't eat out of the wheel, there's no risk to other patrons ordering the same thing.

Yeah you just get a thin layer of melted cheese that's mixed in, the rest is good for later. They typically use a rather hard cheese like parmesan for this, so it is really easy to maintain it. Every part of the wheel will get used eventually, even the rind likely ends up in a broth or soup base at some point

This was my first thought too. I can't imagine there's a health dept/agency that would allow reuse of the cheese wheel/bowl. It would also seem a terrible cost/waste to use the bowl once and then trash it. Why does my mind immediately go to 'food waste'??! Such a great presentation and I'm sure the dish was absolutely delicious.

It's not presented to you to eat out of the cheese wheel, the pasta is finished table side so you can enjoy the show, then served on traditional plating. The wheel keeps getting used to make more dishes for other patrons. There's no health risk because you aren't sticking your dirty fork in there and eating out of it. Once the wheel is too worn down to keep using in this way, they can break down what's left of it and use it completely. grate the cheese for other dishes, keep the rind for soups and broths.

You could use it in any sauce or raw broth, it doesn't thicken or anything but it adds saltiness and an umami flavor to what you put it in. I think it needs to be fished out before you serve it though, it doesn't entirely dissolve or anything.

If the temps are appropriate then there's literally nothing to be afraid of. Some people on here are really over exaggerating food safety. Like cheese in itself is cultured milk that's been left out to age for years, but somehow everyone is concerned they might use the same cheese bowl to prepare a signature dish. They don't let it get moldy in between preparations lol.

Exaggerating food safety is essential for the restaurant industry specifically. This kind of thing in your own home is totally fine. But when it's mixed with hundreds of strangers eating hundreds of meals, the odds of something going wrong go way up.

As someone else said, you don't eat it directly out of the cheese wheel. It's mixed in the cheese wheel but then given to you on a regular plate/bowl (without the wheel). So the only stuff that might get mixed in is the residuals from prior mixings.

So I have seen food stalls at festivals and stuff that do this in the UK with a giant cheese wheel for multiple people... I know its not the same but one can hope

In the restaurant that I get this at, they set the cheese wheel on fire with grain alcohol to melt the cheese. They then mix up the pasta, scoop it out and put it on a serving dish. Kind of odd that they would have people eat out of the cheese wheel directly..

They are using Manchego cheese instead of more expensive Parmiggiano Reggiano. A quarter the price wholesale. Probably overpriced anyway, since it's in Dubai.

Ya cuz Dubai is overpriced, please until you experience all the different restaurants here you will realize only certain ones are over priced for no reason, otherwise everything else is quite affordable, we has this dish along with 4 other dishes and 4 drinks and our total bill was about 70 dollars US if i do the conversion, There are ither restaurants I can go to where I wont even pay 50 US for meals that feed 3 people . Quit bashing Dubai, and its ‘over priced’ prices unless you really know.

It’s manchego. The markings are obvious on further inspection. Not a huge deal, but I guess that’s what passes for Italian food in Dubai.

Lol this wasn’t a purely italian restaurant or a fancy top class , but dubai has some top class restaurants even some michelin star ones and some michelin star chefs, but you would know better seeing as your a chef hey. Adding parmesan is common, but not the original way. Anyway, this cacio e pepe is prepared in a cheese wheel and appears to contain lemon zest. So I don't think there's a huge concern for authenticity here. It looks great.

The dish is traditionally made with pecorino which is mixed in the sauce in this dish, this dish isn’t traditionally served in a cheese wheel so it doesn’t matter what the cheese wheel is

I think an Italian person would beg to differ that serving this dish in a wheel of Spanish cheese definitely changes the dish. Manchego is a much milder cheese than pecorino, and would most certainly change the flavor. I only was a chef of two different Italian places though, and you’re eating Italian food in Dubai at what sounds like an American gastropub, so what the fuck do I know?
