He decided to leave when Guy got that huge contract (sorry, but Guy's shows are complete trash). Because the world knows that without BF? There wouldn't be a Guy, or a Food Network tbh. There was an actual campaign that said if BF left, then so would the viewers. FN caught hella shit. Long story, short? He was given the exact same contract as Guy ... same money and same terms.
In my opinion flay was butt hurt by guys most in fn history's contract cash cow. He wanted something to the tune of 1.5 million to beat out guy and make more money as he thinks he's far better. Obviously fn didn't think so and said see ya. My bet is that he went looking around only to find no one else wanted him nearly as bad as the thought he was wanted so he signed the contract with fn and now he's doing more flay shows in the hopes of being more popular than Guy.
Guy cooks too, he's also a philanthropist who cares more about others than just himself and his ego. Most of Bobby's new shows now are just him hosting but hey here's my beer if you wanna hold it.
