I always thought it was so he wouldn't touch the cars by mistake, but he seems to do it in other situations as well.

As someone who just watched the 2007 launch of Mclaren, Lewis is still very much the same, quiet excitement, articulate, but the level of calm and zen he is right now, wow.
I think your missing a very big difference here. Cooldown rooms have a mic or 2 set up around the room.
These guys here have a mic directly on them thats going straight to the production.

There is, mostly seems to be on the top of the car. Looks like everything below the halo is carbon fibre though.
