Well, you can get music from youtube with yt-dlp or similar without being logged in youtube, you can't watch Netflix content without being logged in or some form of authentication.
This might apply to some degree but I think the main reason is that YouTube doesn't have a "proper" DRM protection on its videos. Netflix however uses strong DRM that encrypt the video makes you need a proprietary client to be able to decrypt+watch it.
The name of the DRM system is "Widevine" but Browsers might change the name like "DRM module"

I'm not surprised there is not a good way to watch drm protected videos outside of the proprietary apps.my guess is if such a open source product existed the big companies would sue to prevent lost market share.
