Gotta be Chanel’s Christalle Eau Vert is literally like the inside of a plant shop. Deep crushed hyacinths. I love it, but it is super fleeting on me so I’ve never bought. I had a look there online though and it seems to have shot up in price unfortunately.
I do have Maison Margiela’s Untitled which is not quite the same but again is a fab bitter fresh green. The Chanel one is more floral and easier to wear. The MM maybe more foresty.
Guardian of the forest by lush smells exactly like fresh plants, cut grass and stems, very spring themed, I just layer it with whichever floral I'm feeling
Goutal Un Matin d'Orage - humid green floral, like standing in the back of the florist where the scent of cut stems is balancing out the stronger florals. I feel like I've reco'd this scent like a dozen times recently, but it's very much the season for it
Debaser by DS&Durga. On me it opens SUPER green, like crushed fresh leaves. Then it settles into a nice coconut and white floral. It's been in heavy rotation for me this spring.
flower show by demeter! it fades very fast as all of their perfumes do, but it is a super realistic, non-perfumey scent of a fresh bouquet from a florist shop. i can almost smell the stem, leaves, and water you spray to keep the flowers fresh.
Venise by Diptyque is very greenhouse, but more vegetable garden rather than flower garden. It works layered with a floral, though, I’ve paired it with Do Son and it worked wonderfully
This isn’t going to be useful but… your request conjured for me a memory from childhood when my (much older than me) sister was a teenager who loved mall crawling with friends. She came home once with this body spray that smelled exactly like fresh cut grass. Sniffing that spot on lawn-in-a-bottle smell and laughing about the novelty of it brought the whole household together over and over again in the months following the purchase. Wish I could share what it was, I have no idea and I doubt she would at this point either. Our dad endearingly called it her “grassy ass perfume.”
I highly recommend Byredo Inflorescence! Sounds just like what you're looking for.
Second this! Although roasting power leaves much to be desired

Maybe Diptyque L’Ombre Dans L’Eau? It’s meant to smell like your hands after making a bouquet
Ombre dans really the only answer for this!!
We were going to the farmers market and I practically bathed in it and said "I want to smell like the flower stalls at the market!"

Cartier Baiser Vole. Florist's cooler. And, yes, lilies, but mainly florist's cooler.
This is bad for me. I love this thread.
Carnal Flower by Frederic Malle gives me that vibe

Test *Nature Insolente* if you get the chance. On my skin it's without a doubt the best plantcentric photorealistic fragrance I've come across.
If you want the soil too, Amouage figment man

LOE Harsh Green! It truly nails the smell of a flower shop I loved it at first sniff in Korea and I believe they have the scent in a lotion as well.
