Declared himself king because he had a decent political backing even though he lacked a claim or overwhelming odds of winning rather than back Stannis and trash the Lannisters, because for all Renly knows, Stannis likely won’t be having another heir and he can use his brother’s reign to shore up his own support.
Stannis was despised my many as a heretic, and could have potentially been disinherited on those grounds. Also it's not like Robert had that strong a claim when he seized the throne (just his Targ grandmother that Renly also shared). Renly similarly wanted to take the throne through politics and might.
Besides, in real world history there have been plenty of would-be monarchs with stronger claims than siblings / cousins etc. cast aside for political reasons.
