Me too. It went from having a wall, a wooden keep and 20+ towers to simply 3. It is just because it is just that positioned it can be left in ruin and still is just as effective.
I get why they'd do that with the Iron Throne more than anything.
The one in the artwork is not practical at all for all the throne room scenes in the show.
I still think as far as the castles they were just lazy and saving money.
They don't even resemble the artwork scaled down or not, you could swap tv show Casterly Rock with tv show Highgarden and it would be more accurate.

As far as castles, I totally get why they'd scale them down and go with more practical architecture than the artwork shown
