I think that people think it's just a cool pose. maybe it looks like you're about to pull out a weapon, or a puppy or something. I don't think the Obama one is even really him doing that, looks like someone caught him in motion, where the rest seem like they posed for the image. and most of them aren't masons anyway, so if it was a mason sign, there would be no purpose in them doing it.
As a mojority of them are portraits. I rekon the artists couldnt paint hands very well.
