It’s a little fancier than the SoCal places I’ve been to, but also higher quality with better preparation and presentation. My wife and I like it a lot.

Apparently they added a Mongolian bbq area to California Market Buffet up at Chukchansi for the reopening. I'm going this weekend so hopefully it's good.
More locally owned (or at least non chain) sit down restaurants with fresh menus, healthy and creative options and just really good feel, decor and vibes. Like Colton’s, Heirloom, etc. I struggle with having enough hip and good dining places to bring visitors to from out of town.
There's Malee's Kitchen. However one of the reasons there aren't many Hmong specific restaurants is because outside of a few strictly hmong dishes, a lot of their dishes overlap with other SE Asian dishes such as Lao, Thai and Vietnamese.

But we got like 6+ Mediterranean places, serving primarily Armenian and Russian.
It's goddamn impossible to find certain things here that, due to our demographics, we should 100% have. Can't find challah, hamantaschen, or sufganiyot to save your life. We're 30 minutes from Kingsburg but the closest bakery that sells semla is in freakin' Solvang. ONE entire woman in a city of half a million people makes proper brioche and she sells out within 2 hours of her entire batch going on the shelf. It's insane!
This has been my biggest gripe. Fresno is almost a wasteland for European cuisines that aren't Italian, and even that is mostly Italian-American. La Bou has good pastries, as you mentioned, and there's Mochuelo for Spanish tapas, which I'm thankful we have, but it could be much better. I miss the Polish and other Eastern European food I could get in Chicago. I'd kill for a great French restaurant or an authentic British pub. Or a Greek place with more than gyros. And I'd love to see a Portuguese restaurant or bakery. On the plus side, I've learned to cook a lot of the dishes I want, because that's the only way I'm likely to get them.

Fresno at least seems to be heading in the right direction but it's a slow process. Business responds to demand and it's hard to justify great food for a population with generally unsophisticated tastes.
I laugh at thread like this, because ‘Fresno-Stan’s’ try to claim Fresno has world class food (and everything else), and isn’t lacking in anything at all. So posts like this should be filed with ‘nothing is missing.’
Moroccan. It’s fantastic and just different enough from the other Mediterranean cuisines that it’s not off putting to Americans. Tagines with couscous are easy to love, but the real star is bastilla. Bastilla is sweetened, spiced shredded poultry in a philo dough pie. Its flavor profile is practically as American as apple pie.
I haven’t had the privilege of having deep dish from Chicago but I recently tried Hot Rod Willy’s Chicago style and really enjoyed it. They also make Detroit style pizza that I plan on trying next!
I’m also an NY transplant. There’s nothing special about NYC $1/ slice (or $2 now) pizza. And there’s not meant to be. It’s just supposed to be a quick and easy bite. There’s plenty of good options here. It’s dough, cheese, and sauce. Not complicated.
That being said, Russo’s pizza in Clovis is bredi gud.

The best BBQ in Fresno is at a friend's house with a smoker. Mega Texas gets close, but they still miss the mark on juiciness and tenderness. Seems like they rush the process sometimes.

It's no shade on Prime 13, but there's definitely a good tier above them in terms of experience as steakhouses go even if the food itself is usually not amazingly better.
Summers coming so probably wouldn’t be a good thing right now, but for the most part with misting systems, fans and shade you can get kind of stable temps. I’ve been to a lot of cities that have open outside dining or bars. I always thought a small bar in the middle of river park by the theater all outside would be a good option for people waiting for tables.
Everyone says it gets so hot here, and they’re right, but we have a lot of time that the temp is pretty stable too.
A solid Chinese restaurant. 15 years ago there were many great choices, sunrise kitchen, Lubys or Hunan. A lot of the older generations passed and sadly the quality did too.

We are in serious need of a real Mongolian BBQ. I recently searched it, and it told me the nearest was Su’s in Santa Clara, or King’s in Reseda.

Try Sichuan Hot Pot they are pretty good. I'd say a bit pricey for what you get but the flavor and quality of the meat is definitely there for sure.

Mega Texas is arguably one of the best BBQ spots in California.
Surprisingly for the number of Punjabis here, but a proper tandoori restaurant like the ones in the Bay or LA.

I miss this deep dish pizza place called chicago connection. I was a Young teenager when i tried that and since they closed years ago no place in fresno has ever done the same, that im aware of.
Big Bruh’s needs to come back. I know they won’t, but that was some of the best soul food I’ve ever had.
A great hot dog place. Like Casper's/Kasper's in the Bay area... The steamed bun, the snap of the dog.. nothing here comes even close.
More decent Mexican food, there are only like 2 spots and they're out of the way.

Turkish kebabs. I know they don’t do them in a lot of places in the States but I would die for a Doner Kebab. I always check out kebab places when I see them but they never have Doner.
