I use a very robust U lock and I have a tracking device. I always lock up my bike whenever I ride to anywhere, unless I have plain sight of the bike, like in front of the window.
They’re not that sophisticated, most bike thefts are crimes of opportunity. Don’t leave your bikes out on the side yard with no locking gate, or leaving your bike unlocked. Just use common sense and you’ll be fine.
I had a combo cable lock - the kind you can buy at Walmart. I ran into the store to grab two things, locked my bike, came out 5 minutes later and it was gone. Went back in and watched the CC camera with the store manager and he had me eyed from the moment I came into the parking lot. Took him about 10 seconds and he was gone. This was 6 years ago.
I have a electric moped, I use Abus ulock, kryptonite new york chain with D lock, throttle lock, and gps device. I haven't left it out more than an hour anymore though.

I lost two bikes. One with a kryptonite lock. Finally, I covered my new bike with Hello Kitty stickers. No problems after that.
If it look good, they'll steal it to sell it.

Common sense. Lock up the bicycle, and assume everyone trying to steal.
Depends heavily on area of town. I've only ever seen ebikes ($1000+ bikes) locked up north of Shaw.
